Countryside Ristoro of the 'Agriturismo il Merollo

Il Ristoro, inspired by the Umbrian farming tradition, is characterized by rustic “arte povera” furnishings. It is the Temple of Taste, as Carlo likes to call it, a stronghold of regional culinary tradition. Together with his partner Angela, he creates dishes that blend past and present, always using wholesome ingredients, most of which come from their own farm. Here, on 10 hectares of land, they raise excellent free-range pigs and poultry, as well as producing extra virgin olive oil, wheat flour, chickpeas, and vegetables.

What to eat at Merollo

Among the most famous proposals, we have “Palombe alla Todina,” Oca al forno ripiena di Cicotto,” Mixed grills, Roast suckling pig in porchetta, peasant appetizers with the famous chopping boards and cheeses of the area, Panzanella, then first courses with Strangozzi alla Contadina, Tagliatelle al Ragù, Soups of all kinds. There is certainly no shortage of desserts with Zuppa inglese il Riccio al Caffè and Tozzetti and sweet wine. Special attention is given to Spontaneous Herbs!

Our Menu is as Carlo likes to tell it, a menu by voice because the dishes and ingredients vary according to what is in the garden, the season to what comes from the woods, game, all of course accompanied by local wines.

Eating well and in tranquility this is our credo, so much so that we have also been reported on “OSTERIE D’ITALIA 2024” as a Slow Food establishment.

What to eat at Merollo

Throughout the year we organize evenings or full days dedicated to Todi’s food and wine traditions: “Come and Make the Merollo Pig,” “Come and Be a Norcino,” the “Spring Scafata,” to name a few. There are also events dedicated to wine, with tastings and food-and-wine pairings.

We also arrange, by reservation, cooking classes featuring the preparation of ancient recipes for homemade pasta, breads, desserts, and traditional dishes.
